Those who know me know that I practiced baby-led diversification with my four little ones, in short it consists of starting diversification with solid foods, without going through the puree stage and letting the child explore food and manage what he decides to eat. I LOVED the experience and I recommend that all new parents learn about it. It is not a method that suits everyone, but I find that it is an interesting tool to bring about a healthy relationship with food from a very young age.

These pancakes are very soft thanks to the grated apples they contain and they have a nice texture for babies who are starting to eat on their own, BLW or not! Served with a little plain yogurt and maple syrup (for older children!), they are sure to please everyone.

PS If you have gourmets around the table, don't hesitate to double the recipe!
I recommend substituting applesauce for the brown sugar if you are making this recipe for babies since added sugar is avoided until at least one year of age.

Apple and cinnamon pancakes
Want to vary your breakfasts? I have a very simple pancake recipe for you, reminiscent of apple pie straight out of the oven! They are perfect for cooking with children and ideal for little ones who are starting DME (baby-led weaning).
Ingredients
Preparation of the dough
- 1 cup flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- A pinch of salt
- 3/4 cup oat milk
- An egg
- 2 tbsp brown sugar (or applesauce)
- 1 tbsp vegetable margarine, melted and warmed
- 1 tsp vanilla extract
- A grated apple
- Oil or melted butter for cooking
Sides
- 1 cup plain coconut yogurt
- 1/2 cup maple syrup
Instructions
- In a bowl, mix the flour, baking powder, cinnamon, nutmeg and salt.
- In another bowl, mix the milk, egg, vanilla and melted margarine.
- Make a well in the center of the dry ingredients and gradually stir in the wet ingredients. Do not overmix.
- Use a spatula to gently fold in the grated apple.
- Add a little milk if your preparation seems too thick.
- Heat a skillet or griddle over medium-high heat, use a pastry brush to lightly oil, pour in about 2 tbsp of the mixture to form small pancakes.
- Cook for about two minutes and turn when bubbles start to appear on top, continue cooking for 1 minute.
- Serve hot with yogurt and maple syrup.
