Baked beans, or "bines" as they are affectionately known in Quebec, are a true culinary tradition that complements breakfast, brunch, or a comforting family meal. Their history dates back to the first Quebec settlers, who prepared this nutritious, slow-cooked dish to feed large families during the long, harsh winters.

Personally, I've tried many recipes over the years. Some prefer them tomatoey, others sweet, or rich in molasses. This version is the result of much trial and error, and offers a perfect balance of flavors that will please everyone.

For this recipe you will need a traditional jar beans with bacon or a enameled cast iron casserole dish. Personally, I've been using an enameled cast iron casserole dish for years, and the results are always perfect! Several sizes are available on the market. This recipe makes about 4 liters of preparation. I recommend a casserole dish of approximately 6 quarts (5.7 liters).

Cook Time: 3 hours 20 minutes
Total Time: 13 hours 20 minutes

Ingredients

  • 900g dried white beans (about 4 cups)
  • 10 cups cold water (for soaking)
  • 4 cups cold water (for cooking)
  • 2 cups original chicken broth or 25% less salt (do not use unsalted broth)
  • ½ cup maple syrup or brown sugar
  • ¼ cup molasses
  • ½ cup ketchup
  • 4 whole cloves, crushed or ¼ teaspoon ground cloves
  • 1 large chopped onion
  • ½ teaspoon pepper
  • 1 teaspoon of dry mustard
  • 350 g of brined pork

Instructions

    1. Soaking. Soak dried white beans in water for 8 to 10 hours. Use an enameled cast iron casserole dish, leaving about 2 inches (5 cm) between the water and the rim of the casserole dish.
    2. Then drain the beans.
    3. Preheat oven to 250°F.
    4. PreparationFinely chop the onion. Cut the cured pork into 1 cm cubes. Then mix all the ingredients together.
    5. Cooking. Bring the mixture to a boil on the stovetop, then transfer the casserole dish to the oven and cook for approximately 3 hours.

Notes

    1. Try replacing black pepper with white pepper or a blend of peppers. This significantly changes the flavor. Plus, white pepper helps prevent visible particles from appearing in the final dish.
    2. Add maple syrup as a garnish according to your taste 😉
    3. If you only have unsalted broth on hand, add 1 teaspoon of salt.
