Dairy-Free Cinnamon Rolls

Ingredients

For the Brioches

  • 2 1/4 tsp instant yeast
  • 250 ml (1 cup) lukewarm oat milk (110-115°C)
  • 100 g (1/2 cup) sugar
  • 80 ml (1/3 cup) vegetable margarine, melted
  • 1/2 tsp salt
  • 2 eggs at room temperature
  • 500 g (4 cups) all-purpose flour
  • Neutral oil (for the bowl)

For the Cinnamon Topping

  • 200 g (1 cup) brown sugar
  • 3 tbsp flour
  • 2 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 80 ml (1/3 cup) vegetable margarine, melted

For the Vanilla Frosting (Optional):

  • 130 g (1 cup) caster sugar
  • 1 tbsp vegetable margarine
  • 2 tsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Activate the yeast: Heat oat milk, add 1 tsp sugar and yeast. Set aside.
  2. Mix the dry ingredients: In a bowl, mix the flour, sugar and salt.
  3. Mix the wet ingredients: In another bowl, mix the eggs and melted (lukewarm) margarine.
  4. Combine ingredients: Add the wet mixture to the dry ingredients. Mix roughly.
  5. Add the milk and knead the dough: Add the milk-yeast mixture and knead the dough with a mixer or by hand for 10 to 20 minutes, until elastic.
  6. First rest: Form a ball, place it in an oiled bowl, cover and let rise for 30 minutes.
  7. Prepare the filling: Mix brown sugar, flour, cinnamon, nutmeg and salt.
  8. Shape the buns: Roll out the dough, brush with margarine, sprinkle with the filling and roll. Cut into buns and place in an oiled mold.
  9. Second rest: Cover and let rise for 30 minutes.
  10. Cooking: Preheat the oven to 350°F and bake the buns for 20-25 minutes.
