
Chocolate Ganache
A smooth and shiny dairy-free ganache to glaze your favorite desserts.
Ingredients
- 1/3 cup water
- 1 tbsp strong ground coffee
- 1/4 cup butter or vegetable margarine
- a pinch of salt
- 1/3 cup cocoa
- 2 1/2 cups icing sugar
- 1 tsp vanilla extract
Instructions
- In a small saucepan, bring the water and butter to a boil.
- Remove from heat and immediately add cocoa and coffee, whisk well.
- Gradually add the powdered sugar and mix until the ganache is shiny and the powdered sugar is well incorporated.
- Finish by adding the vanilla extract.
- Let the ganache cool, depending on your needs you can use it as a coulis when it is lukewarm, or as an icing when it has been able to rest in the refrigerator.
