Zucchini Quiche
Delicious for brunch or dinner, topped with goat feta and accompanied by a delicious salad, it's the perfect way to use up the zucchini that is in abundance in the garden right now!
Ingredients
- A homemade or store-bought pie crust
- Two medium sized zucchinis or courgettes
- Three eggs
- 1/2 cup oat milk
- 1 tbsp dijon mustard
- 1/2 tsp dried oregano
- Salt and pepper
- Dill flowers or other herbs for garnish.
- 1/4 cup goat feta
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- On a lightly floured surface, roll out the pie dough to form a circle slightly larger than the quiche plate and place the dough on the bottom, making sure to fold the dough over the edges a little. Set aside in the fridge.
- Cut the zucchini or courgettes in half lengthwise and slice thinly, set aside.
- Mix the eggs, milk, Dijon mustard and herbs, add salt and pepper.
- Pour the mixture into the tart base and place the sliced zucchini on top.
- Bake for 30-35 minutes in the oven, on the bottom rack.
- Garnish with goat feta when removed from the oven.
