Chicken and dumpling stew
This chicken dumpling stew recipe is a great way to use up leftover cooked chicken. Easy to make, it's a family favorite with its soft dumplings and flavorful broth.
Ingredients
For the stew
- 3 cups cooked chicken
- 1 chopped onion
- 2 chopped carrots
- 2 celery stalks, chopped
- 1 packet of mushrooms (454 gr)
- 1 or 2 cloves of crushed garlic (to taste)
- 1/2 cup frozen green peas
- 2 tbsp butter or margarine
- 2 tbsp flour
- 1 tsp dry mustard
- 1 liter of unsalted chicken broth
- Two tablespoons of mixed fresh herbs (rosemary, thyme, sage)
For the dumplings
- 1 cup flour
- 1 tsp baking powder
- A pinch of salt
- 1 tbsp butter or margarine
- 1/3 cup oat milk
- 1 egg, lightly beaten
- 1/3 cup shredded cheddar cheese or faux-mage (optional)
Instructions
- Prepare the vegetables: In a large skillet or saucepan, sweat the onions in the butter for 5 minutes over medium heat. When they become translucent, add the carrots, celery, salt and pepper. Cook for an additional 5 minutes.
- Cook the mushrooms: Add the mushrooms and garlic to the pan. When the mushrooms start to brown, sprinkle with flour and dry mustard. Mix well and cook for 2 minutes.
- Add broth and chicken: Gradually pour in the broth, stirring well to obtain a smooth consistency. Bring to a boil, then add the cooked chicken, frozen green peas and fresh herbs. Bring to a boil again.
- Prepare the dumplings: While the stew simmers, combine the flour, baking powder and salt in a bowl. Stir the butter into the flour, then add the beaten egg, milk and cheese. Mix gently.
- Final cooking: Final Cooking: Using a tablespoon, drop dumpling dough balls onto the stew. Bake at 400 degrees Fahrenheit for 20 to 25 minutes. For softer dumplings, cover the pan. Leave uncovered to brown.
Notes
This stew is perfect for using up leftovers and can be adjusted with available vegetables. It reheats well, making it ideal for next day meals.
