Savory Zucchini and Chorizo Tart

Discover how to prepare a tasty savory zucchini and chorizo tart. Ideal for a quick dinner, this recipe combines simplicity and taste while adding a touch of color to your table.

Ingredients

For the crust

  • 1 cup flour
  • 1/2 cup crumbled crackers (soda crackers or other)
  • 1/3 cup vegetable oil
  • A pinch of salt
  • A sprig of fresh thyme
  • 2 tablespoons oat milk

For the garnish

  • An egg
  • 1/3 cup oat milk
  • 1 teaspoon Dijon mustard
  • 1/2 cup of shredded cheese or cheese (cheddar type)
  • 1 tablespoon garlic flower or 1/2 garlic clove, finely chopped
  • A yellow zucchini
  • A green zucchini
  • A red onion
  • A few slices of chorizo
  • Salt and pepper to taste

Instructions

  1. Prepare the crust. In a large bowl, combine flour, crumbled crackers, vegetable oil, salt, fresh thyme and milk. Press mixture into a tart pan with a removable bottom. Refrigerate while you prepare the filling.
  2. Preheat the oven. Preheat oven to 375 degrees Fahrenheit, with rack in center.
  3. Slice the ingredients. Prepare the zucchini, onion and chorizo by cutting them in half lengthwise, then into thin slices.
  4. Prepare the filling. In a bowl, whisk together the egg, milk, mustard and garlic scape. Add the grated cheese and pour the mixture over the chilled crust.
  5. Garnish the tart. Arrange the vegetable slices and chorizo on the filling.
  6. Bake the tart. Place the pie in the oven and bake for about 35 minutes, until the center is cooked through.

Notes

For an extra touch of flavor, you can add some fresh basil before serving, or use a blend of cheeses to vary the tastes.
