Ingredients
Syrup
- 1 cup sugar
- 2 cups of water
- Zest and juice of one lemon
Dough
- 2 ¾ cups flour
- 4 ½ teaspoons baking powder
- 1 ½ teaspoons salt
- ⅔ cup butter, margarine, shortening, or coconut oil
- 1 cup oat milk
Fruits
- 3 cups of seasonal fruit (strawberries, blueberries, raspberries, apples, etc.)
- ¼ to ½ cup sugar (depending on the acidity of the fruit)
- Zest of a lemon
- A few knobs of butter
Instructions
- Preheat the oven: Preheat the oven to 450°F (230°C).
- Prepare the syrup: In a saucepan, combine water, sugar, lemon zest and juice. Heat over medium heat, stirring until sugar is completely dissolved. Pour syrup into a 9 x 13-inch glass baking dish.
- Mix the dry ingredients: In a bowl, combine flour, baking powder and salt. You can use a sifter to make sure the flour is light. Mix well to evenly distribute the baking powder and salt throughout the flour.
- Add the fat: Add the butter (or other fat) to the dry ingredient mixture. Use a pastry blender or your fingers to cut in the fat until the mixture resembles coarse meal with pea-sized pieces.
- Add the milk: Pour in the oat milk and mix gently. Mix just enough to hold the dough together, without overworking it to prevent it from becoming tough.
- Knead and roll out the dough: On a lightly floured surface, knead the dough about 20 times, then use a rolling pin to shape into a 10 x 12 inch rectangle.
- Fill the dough: Spread the fruit evenly over the dough, sprinkle with sugar to taste, add the lemon zest and dot with a few knobs of butter.
- Roll the dough: Roll the dough into a cylinder.
Start with the longest side and roll gently to enclose the filling inside. - Cut the rolls: Use a sharp knife to make 12 equal slices.
- Assemble and cook: Place the rolls side by side in the prepared pan with the syrup (step 2). Bake for 25 to 30 minutes until golden brown and the syrup is bubbling.
Notes
- Adapt the recipe using different seasonal fruits that you have on hand or according to your preferences.
- If you don't have a 9 x 13 inch pan, a large cast iron skillet will work just as well!
