Quiche is an excellent way to use up the vegetables and herbs from the garden, which are in abundance at the moment!

Zucchini Quiche with Zucchini and Dill

Delicious for brunch or dinner, topped with goat feta and accompanied by a delicious salad, it's the perfect way to use up the zucchini that is in abundance in the garden right now!

Ingredients

  • A homemade or store-bought pie crust
  • Two medium sized zucchinis or courgettes
  • Three eggs
  • 1/2 cup oat milk
  • 1 tbsp dijon mustard
  • 1/2 tsp dried oregano
  • Salt and pepper
  • Dill flowers or other herbs for garnish.
  • 1/4 cup goat feta

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. On a lightly floured surface, roll out the pie dough to form a circle slightly larger than the quiche plate and place the dough on the bottom, making sure to fold the dough over the edges a little. Set aside in the fridge.
  3. Cut the zucchini or courgettes in half lengthwise and slice thinly, set aside.
  4. Mix the eggs, milk, Dijon mustard and herbs, add salt and pepper.
  5. Pour the mixture into the tart base and place the sliced zucchini on top.
  6. Bake for 30-35 minutes in the oven, on the bottom rack.
  7. Garnish with goat feta when removed from the oven.
