What's better than a spicy galette to satisfy a craving? With a touch of molasses and a delicious blend of spices, these cookies are a hit in our house. Plus, you can sneak some vegetables in for the kids! You can vary the "add-ons" according to your preferences. My recipe contains shredded coconut and raisins, I avoided nuts so I could put some in the lunch box, but these galettes would be just as delicious with chopped walnuts.
I like to test bake a single cookie before making a whole sheet pan, it allows me to adjust the temperature and baking time without sacrificing a large batch of cookies. As with the molasses cookies, I use a small ice cream scoop to form the cookies and flatten them slightly before baking. My favorite scoop holds about 2 tablespoons, which is a non-essential tool… but so much fun to use!

Soft Carrot and Spice Cookies

Ingredients
- 3/4 cup vegetable margarine
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1/4 cup molasses
- 2 eggs
- 2 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1/4 tsp mace
- A pinch of cloves
- 2 cups quick-cooking oats
- 1 cup unsweetened shredded coconut
- 1 cup finely grated carrots + 2 tbsp for garnish
- 3/4 cup raisins
Instructions
- Preheat oven to 350°F, positioning rack in upper third of oven.
- In a small bowl, combine 2 tbsp grated carrots and a little sugar, set aside.
- In a mixer, beat together margarine, brown sugar, sugar and molasses until light and fluffy, about 3 to 4 minutes.
- Add the eggs one by one as well as the vanilla extract. Mix well.
- Sift together flour, salt, baking soda and spices.
- Add the dry ingredients to the wet ingredients and mix well.
- Add the oats, coconut, raisins and grated carrots.
- Shape into balls using a small ice cream scoop, flatten slightly and top with the grated carrots set aside in step 2.
- Bake for 10 to 12 minutes, adjust the time according to the size of the cookies.
