Molasses soft cookies are a family classic in our home! Moist, flavorful, and delicious, these little treats are dairy-free and nut-free, making them perfect for the whole family. They also freeze well, making them a great make-ahead idea for kids’ lunch boxes or for when you’re craving something. This recipe will make about 5 dozen cookies, but you can easily halve the amount if you want a smaller portion (trust me, they go fast!).

Molasses soft cookies

Yield: 60 pancakes

Molasses soft cookies are a classic in our house—everyone loves them! Plus, they freeze really well and are dairy and nut free, so I can easily slip them into the kids’ lunch boxes in the morning. This recipe makes about 5 dozen mini cookies, so feel free to cut them in half if you want fewer—but trust me, they’ll be gone fast!

Ingredients

  • 3/4 cup vegetable margarine
  • 1 cup brown sugar
  • 1 cup molasses
  • 2 eggs (at room temperature)
  • 1 tsp vanilla extract
  • 1/4 cup oat milk
  • 5 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp grated or ground fresh ginger
  • 1/4 tsp ground cloves

Instructions

1. Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper.

2. In a large bowl, combine margarine, brown sugar and molasses. Mix well. Add eggs, vanilla extract and oat milk. Beat until smooth.

3. Sift together flour, baking powder, baking soda, salt, ginger and ground cloves. Add dry ingredients to wet mixture in batches, mixing well after each addition. Batter should be thick but manageable.

4. With a cookie spoon, take portions of dough and place them on the prepared baking sheets, spacing them about 5 cm (2 in) apart.

5. Bake for about 10 to 12 minutes, until the edges are lightly browned. The patties should remain soft. Let cool on a wire rack.

Conservation

These patties keep very well in an airtight container for about a week, and can be frozen for up to 3 months. To thaw, simply let them sit at room temperature for an hour or two.

Trick

These pancakes are perfect for kids' lunch boxes. You can also take them for a quick snack on family outings!
