My friend Julie told me that these were one of the best cookies she's ever had, and I have no trouble believing her, because I do too! I'm convinced that if the popular sub chain restaurant came out with a s'mores cookie, they would taste exactly like these.
I adapted a recipe from Amanda Powell and experimented a few times to see which chocolate-marshmallow-Graham combination I prefer. The best thing to do is to hide the marshmallow in the center of the cookie before baking. You also have to avoid overbaking the cookies or the marshmallow will melt and you end up with an empty cookie! Apparently using Vegan marshmallows would prevent this, but I haven't tried it, if you do, let me know how it goes!
One last tip before you get cooking, test baking a single cookie to find the best baking time for your oven.

S'mores Cookies
A perfect combination of chocolate, graham crackers and marshmallows to keep us going until summer!
Ingredients
- 2 1/2 cups (320 g.) all-purpose flour
- 1/2 tsp baking powder
- 1 tsp baking soda
- 2/3 cup (150 g.) softened butter or vegetable margarine
- 2/3 cup (150 g.) brown sugar
- 1/3 cup (80 g.) sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup (90 g) Graham Cracker Crumbs + 1 tbsp for garnish
- A pinch of salt
- 3/4 cup (115 g.) coarsely chopped dark chocolate chunks or chocolate chips
- 1 cup (50 g.) large marshmallows, cut in half, about 15 marshmallows.
Instructions
- Sift together flour, baking powder, baking soda and salt.
- Beat together the margarine or softened butter, brown sugar and sugar, add the eggs one at a time, followed by the vanilla extract and gently fold into the flour mixture.
- Stir in graham crackers and chocolate chips.
- Using scissors, cut marshmallows in half and place 1/2 in the center of a cookie. Roll the ball of dough in your hands to make sure the marshmallow is completely covered. Sprinkle with graham cracker crumbs (optional).
- Place the cookie balls on a baking sheet, cover them with plastic wrap and place them in the refrigerator for at least an hour.
- Preheat oven to 375 degrees Fahrenheit, position rack in upper third of oven.
- Line a baking sheet with parchment paper and start by baking a single cookie to test the baking time: it can vary between 7 to 9 minutes depending on the size of the cookie and your oven. Remove from the oven once the cookie is well risen or take out when it explodes to reveal the marshmallow. (see images below)
- Bake the cookie balance and enjoy!
Notes
The ideal is to hide the marshmallow well in the center of the cookie before baking it.
You should also avoid overcooking the cookies otherwise the marshmallow will melt and you will end up with an empty cookie!
